We use Agria potatoes, a perfect variety for golden fries, crispy on the outside and soft on the inside. We peel, trim, rinse, and dry them… by hand. Every day.

Double cooking for the perfect texture
We cook them in two stages. First, so they're tender to the core. Then we toss them in hot oil again, so they're just the right amount of crispy. This is what gives them that texture that we'll let you discover... or rediscover.

Guérande salt and homemade spice mix
No need to overdo it when you have the right ingredients. We finish our fries with Guérande salt and a secret spice blend that we tweaked until it was just how we wanted it: flavorful, but not overpowering.
